Celebrate and inspire the coming New Year with whimsy thanks to Brennon Bergeron from Wines Unlimited...

Two "wines that foam": one white, one rose. Followed up by a hearty Bordeaux to warm that (fleeting) winter chill, and finishing with a Port: a perfect pairing with one of our cheese plates shared in our cozy courtyard.

Roederer Estate Brut Anderson Valley
The Roederer Estate Brut is crisp and elegant with complex pear, spice and hazelnut flavors. It is fresh and lightly fruity with great finesse and depth of flavor. 60% Chardonnay 40% Pinot Noir

Simonnet-Febvre Cremant de Bourgogne Brut Rose
Fresh and vivacious style. Showing powerful aromas of red fruit (raspberry, redcurrant) and showing fine bubbles and pale rosé colour. Ideally for an aperitif but it will also match perfectly desserts made with red fruits and chocolate. 100% Pinot Noir

Chateau Haut Beausejour Saint Estephe 2012
The 20 hectare Saint-Estèphe vineyard of Château Haut-Beauséjour is dominated by Merlot. The vineyard is planted to 50% Merlot, 40% Cabernet Sauvignon, 5% Malbec and 5% Petit Verdot. The terroir is gravel and clay with some limestone.
Youthful aromas of blackberry, plum, new leather, and cedar. On the pallette there is plum, red delicious apple, and very pleasant mature wood flavors. A little spiciness and lingering red apple skin. The tannins are medium and provide a structure conducive for easy drinking.

Ramos-Pinto Collector Porto Reserva
This ruby port has a vibrant youthful color, with a red-brown rim that is the only visual concession to maturity. It has full aromas unveiling dry plum, fig and berry scents with a touch of pepper. On the palate, the attack is soft and succulent. This is a rich, subtle wine with a fine, generous structure and remarkable persistence. The Collector is an excellent accompaniment to mild cheeses and sweet dark chocolate.
